Named after the Slavic god of fertility, Jarrylo (pronounced Yar-i-low) is a unique variety bred by the ADHA. With Summit as its mother, Jarrylo was originally used in lots of lagers and pilsners, but has been successfully used in everything from Weizens to IPAs. It has a unique banana character that plays well with wheats and weizens, but it also inherited its mother's spicey notes, which are perfectly suited for Saisons and other belgian styles. An atypical English hop with more exotic flavors and aromas. Most suitable as an flavor and aroma hop for Pale Ale and IPA. Aroma: Tropical fruit, grapefruit, resin, hints of lychee and blackcurrant. Developed by the company Charles Faram in 2013 trying to get an aroma like Cascade, Centennial and Columbus. Kazbek is bred from the hop variety Saaz with a cross from a wild growing hop variety from the mountains of the Caucasus. Kohatu has been described as having an intense fresh tropical fruit character with pine and flowery notes. Works really well in single hop applications to show case its fruity aroma characters balanced by the extraordinary quality of bitterness. The hop plant comes from Korsta village, Sköns parish near Sundsvall. On a parcel map from 1769, you can see where the hop cultivation was located. Just over 200 years later, the hops were still growing in the same place and were donated to a project with the Nordic Museum, the Program for Cultivated Diversity (POM) and the National Archives (GEORG database) to preserve green cultural heritage. Enzyme preparation which has been developed to increase the complexity of the hop aroma and flavour profile in beer. The enzyme beta-glucosidase is capable of hydrolysing the glycosidic bonds, liberating monoterpene alcohol compounds and glucose. The glucose is fermented by the yeast while the terpenes (linalool) adds to the aromatic expression of the hops. This process of biotransformation also occurs naturally during a normal fermentation process as yeast secretes some β-glucosidase, although the levels of secreted enzymes are strain-dependent.Increases the diversity of hop flavors and aroma by changing the ratio of specific terpene compoundsEnhances the beer mouthfeel and drinkability by reducing unpleasant harsh bitternessSlightly increases wort fermentabilityExpresses more character from less sophisticated hop varietiesThe recommended dosage is 1 g per 20 liters (5 g / hL) at a temperature between 15 - 65 °C. Dilute the enzyme in an adequate amount (avg. 1:10) of water to allow an even distribution in the fermenting wort.β-glucosidase activity in biotransformation is a complex process. There are many factors that will have impact on the final product. The selection of the yeast strain, hop variety, timing of hop additions and timing of enzyme addition will all have a direct influence on the final result. Dry-hopping early in fermentation will result in greater extraction of terpene glycosides. Add the enzyme mid-fermentation to allow time for the enzyme to break down glycosides and the actively fermenting yeast to consume the glucose released from the reaction, while minimizing volatile loss from CO2 stripping. It is recommended to perform trials with Aromazyme in order to optimise recipe and process details. Aromazyme is derived from a selected strain of non-GMO Aspergillus niger.

Born in 1983, Liberty is half-sister to Crystal, Ultra and Mt. Hood. It originates from Hallertau Mittelfrüher and a disease resistant German aroma male. Liberty’s yield is low but it still enjoys popularity, especially in the US. It is a genetically sterile variety and not suitable for breeding.Harvest Moon Brewery uses Liberty liberally in their Full Moon Pale Ale along with Cascade. Given its heritage, it’s no wonder Liberty is likened characteristically to noble hops. Loral, formerly known as HBC 291, provides a more traditional yet unique hop character, providing the floral and herbal notes one would expect from a fine noble aroma hop.The aroma profile of Loral has been described as a “super noble hop” with its wonderful floral and herbal notes followed by a backdrop of citrus and earthy character. A touch of sweet fruity aroma rounds out this well-balanced hop. In beer, the floral notes are accentuated yet complemented nicely by fruity and citrus with just a hint of herbal. Don’t expect an in-your-face fruity character with Loral as seen with some recent U.S. variety releases - this hop is approachable and balanced. Mosaic is described as Citra on steroids, but it’s much more than that. Rich in Mango, lemon, citrus, earthy pine, tropical fruit, herbal and stone fruit notes. Also some blue berry.Mosaic combines a very complex hop aroma with fairly high alpha-acids and low cohumulone which makes it a perfect triple purpose hop (Bittering/Flavor/Aroma). Allround hop from New Zeeland that is a hybrid between Saaz and the moderna New Zeeland hops. Mouteka is great for bittering but shines in flavor and aroma with it's fresh fruitiness with notes of citrus and lime.Commonly used in modern lager and pilsner, belgian ale.Bred by Hop Research Center in New Zeeland as a cross of Saaz and a native strain. Mount Hood (M:t Hood) is an American variation of Hallertauer Mittelfrüh, together with its "sister varieties" Crystal and Liberty. Nelson Sauvin is possibly the most famous New Zealand hop. With its unique oil composition it has an aroma of it's own, reminicent of gooseberries and the grape Sauvignon Blanc from which it got part of its name. Triploid Alpha type developed by the cross of the NZ variety "First Choice" (a relative of the Late Cluster) and an “Old Line” Saazer Male. Released from the New Zealand Hop Research Programme by HortReasearch Centre Riwaka in 2004.This variety is the most recent release out of the New Zealand Hop Research Programme selected on its average alpha of 12-14% with Cohumulone in the region of 24% and an excellent oils profile. The aroma of this hop is described as “bold” as it delivers a herbal infusion of fresh citrus and crushed black pepper. Brewing trials have illustrated Pacific Jade as an excellent hop that delivers a pleasing soft bitterness matched to desirable aroma characteristics.Suited for use as a bittering hop with some excellent results also being seen in dual purpose applications, with a soft bitterness attributable to the low cohumulone. The citrus aroma and flavour notes work well to temper malt sweetness in “fullish” Ales especially when used moderately as a finishing hop. Pekko is named for the Finnish God of Field and Crops. Pekko’s complex and clean characteristics of floral, citrus, and mint lend itself to many different styles of beer. Polaris was bred at the Hop Institute in Hüll and introduced in 2012. The hop variety was a response to the high demand that existed and still exists for more and more aromatic hop varieties. A high alpha variety with a good aroma. The bitterness is soft, thanks to the low cohumulone content. Riwaka smells strongly of passion fruit and citrus with elements of coniferous forest. Riwaka is the archetype for how New Zeeland Hop Character is defined.Unfortunately the Riwaka plants yields a very small harvest which combined with the high demand is the reason why we haven't been able to procure it for many years.Riwaka is excellent for when you want a distinct fruitiness, for example in an APA or IPA. It's also suitable for modern lager and saison.Riwaka, previously called D-Saaz, was developed by New Zeeland hop development program "Hops with a difference" in 1997 by crossbreeding Saaz with a couple of domestic hops. It quickly grew to be one of New Zeelands favorite hops, which is easy to understand once you've brewed with it. Sladek which means "brewer" is a high yielding aroma hop. It is a cross between Saaz and Northern Brewer. Sladek has a classic hoppy aroma, on top of a fruity taste with essences of peach, passion fruit and grapefruit. Our hops are packed in bags that protect against light and air. Developed by the Slovenian Institute for Hop Research and Brewing, Styrian Wolf is one of the latest Styrian hops on the market. When brewed, expect intense fruity and floral notes. Wai-iti is a very popular aroma hop with unusually low levels of alpha acids. It has a very fresh and fruity character of lime and stone fruits. It's been praised as one of the most interesting strains for single hopped beers.Common beer styles are pale ale, hoppy wheat and lagers.Released in 2011, it quickly caught interest for its low levels of alpha acids but high content of aromatic oils. A fine clean triploid Hallertau bred from the German Hallertau Mittlefruh, it is slightly less spicey than true Hallertauer Mittlefruh. This hop variety has a nice mix of floral and slightly citrusy character.
