Next Gen: double the amount of yeast! WLP565 is a classic Saison yeast from Wallonia. It produces earthy, peppery, and spicy notes. Slightly sweet. With high gravity Saisons, brewers may wish to dry the beer with an alternate yeast added after 75% fermentation.

The "Next Generation" PurePitch pack contains double the amount of yeast, very close to the pitch recommendation used by professional brewers without the need for pre-culture.
